2007 Rosé

Each year we bleed off (siphoning it out of the must using a commercial kitchen sieve) a bit of Purisima Mountain Grenache to make our dry rose. It ferments in a little 300 liter stainless steel tank along with the whites to dryness in the cold room. Just before bottling we add back in some of the Grenache from barrel to give the wine its distinctive color and seriousness. The upshot is a rose wine that is structured, has a bit of tannin, and is a perfect springtime picnic wine.

2007 Dry Rosé

This classic Rosé is produced in the traditional French saignée method, in which some of the juice of the red varietals is drawn away from the grape skins relatively quickly, picking up a moderate amount of pigment and very little tannin. While the juice that remains on the skins will become a deeper, richer red wine, what has been siphoned off is fermented to near dryness at low temperatures in anaerobic stainless steel tanks, retaining the fresh fruit character of the varietals in a crisp, thirst quenching package.
Much like the refreshing, dry, Cabernet Franc based rosés of Anjou, France, this wine offers an enticing pale pink to salmon color, aromas of summer fruits (strawberry & melon) and a crisp, clean entry. The flavors encompass the fruit bowl, including raspberry and cherry with a touch of the Syrah spice component.

Served with the grilled Salmon on the patio or just as a Summer quaff all by itself, this delicious Rosé will be a revelation to those that still think pink inherently means sweet!

Our sophomore release of CANA Rosé takes a delicious 'varietal' path by including our estate grown Syrah as the featured grape. Five years ago it seemed as though no "serious wine person" would be caught dead drinking pink wine. Embarrassing ghosts of white zinfandels past haunted many a wine sensibility. However, in just a few short years, dry roses have become perfectly respectable, even sought after by wine aficionados everywhere. And why not? Europeans have been quaffing rosy wines at lunchtime for eons. Roses are low in alcohol, light on the palate, you serve them chilled and, like sparkling wine, they go with just about anything. The succulent watermelon hue of 2006 Buttonwood Syrah Rose is the result of 4 hours of skin contact while whole cluster pressing after harvest. Cold fermentation of six weeks and four months of stainless steel aging preserve the just-picked juicy flavors that suggest pineapple and banana along with strawberry that follows through from the aroma.


Serve this rose well chilled with a salad of cheese stuffed tortellini, red bells, Bermuda onion, kalamata olives, and freshly chopped basil.

Our Rosato blend is comprised of Syrah fruit sourced from vineyards in the Oak Knoll and Coombsville areas of Napa Valley. The components of this Syrah Rosé were fermented in 40% stainless steel and 60% neutral French oak barrels. Primary fermentation was allowed to complete to dryness, while secondary fermentation was suppressed to preserve the crisp acidity and vibrant fruit. This 2006 Rosato was bottled after only 5 months of barrel aging in order to capture the essence of the Syrah fruit profile of ripe raspberry, floral perfume, exotic spices, and black cherry, while ensuring proper timing for spring parties and summer BBQ’s.

The 2007 Sri Rosé is a prelude of things to come as 2007 was a great vintage here in the Santa Cruz Mountains. Made from some very good Syrah sourced from our two favorite vineyards, the Sri Rosé has significant weight in the mouth with that crisp, refreshing acidity that carries the fruit across the palate. One can pick up exotic notes of pineapple, lichee fruit, jasmine, poached pear and minerality on the nose. The surprisingly long finish has a richness and structure one doesn’t usually associate with or expect from a Rosé. Barrel fermented in used French oak with indigenous yeast fermentation. Sri Rosé is a handy wine to have around for the coming of summer.

The 2006 Saigniée Sauvage is a true rosé of Cabernet. The Cabernet Sauvignon grapes were harvested from our Odyssey Vineyard at 24.8 brix. After 36 hours of cold maceration, the fresh Cabernet juice (saigniée) was bled off and fermented separately in stainless steel. The wine was fermented naturally and finished with ½ percent residual sugar. It has a very fresh Cabernet bouquet with flavors that “dance” in the mouth. Light, but with the undertones of serious Cabernet fruit, this wine is excellent with light fare at the beginning of a meal or simply to sip on its own.
