Semillon

Sémillon is the major white grape in Bordeaux, Graves and Sauternes. Whereas today Australia’s major white varieties are Chardonnay and Sauvignon blanc, early in the country’s viticultural development it was Sémillon, which was mislabeled as Riesling.

Food Pairing: As a dry wine, pairs well with dim sum and light summer fare such as ice cold prawns. The classic pairing with Sauterne is fois gras, but is really best sipped on its own.

2006 Solanus Late Harvest Semillon

This unique wine features enticing aromas of ripe peaches, floral and fresh mint, along with flavors of honey, candied peaches, passion flower and figs. With its full, soft mouthfeel and long smoot finish, it is definately a dessert wine to serve with fresh fruit, Creme Brule or creme filled lady fingers. The rich, round mouthfeel, complex fruit and definite acidity make this an enjoyable wine now, while it definitely will improve with bottle age. A highly versatile wine, this Semillon is as enjoyable with salmon as it is with halibut. It will complement a grilled chicken, or one with a complex sauce. Clearly, this wine deserves a place in any cellar.

2004 Dulcinea
St. Helena

The 2004 Dulcinea is comprised of 70 % Semillon harvested at 42 brix and 30% Sauvignon Blanc harvested at 38 Brix. The residual sugar was 11.7% by weight. Each grape variety was heavily botrytis and individual bunches were hand selected. The entire clusters were placed in the press and gently squeezed for 3 hours. The wine was then aged in neutral, small French Nevers oak for 19 months. This wine is an incredibly rich, sauternes-style dessert wine. The bouquet gives immediate apricots and peaches that follow through on the palate. The texture is rich, but not cloying on the palate. The complexity of flavors is quite remarkable--peaches, a touch of tropical, and a hint of nutmeg. Only six barrels were produced.

2000 Botrytis Sauvignon Blanc /Semillon
Napa Valley

The 2000 vintage began early with budbreak occuring in the third week of March. A severe heat wave in mid June caused some of the newly set berries to dessicate, thus reducing the crop. Ideal weather continued for the Sauvignon Blanc from the end of June until harvest, with warm days and cool nights. A rain storm in early October and regular morning fog gave perfect conditions for Botrytis to infect the thin-skinned grapes. The 2000 Botrytis Sauvignon Blanc /Semillon is golden yellow and shows intense classic botrytis characteristics of apricot and honey along with Sauvignon Blanc notes of passion fruit and orange zest. On the palate this seductive dessert wine explodes with sweet citrus and tropical flavors.

2003 Semillon

Our 2003 Semillon sports an apricot and cream nose. The wine is medium to full bodied with a full range of tropical flavors, pear, and melon with an almost nutty finish. The wine will gain complexity and pick up a honeyed, nutty character as time goes by. That’s right, Semillon will age quite nicely! The perfect white wine to stock up on, for those that enjoy serious white wines but are a little tired of Chardonnay. Great with shellfish, cheese and chicken dishes.
